Mandazi is a type of fried bread that is popular in East Africa. Here is a simple recipe for making mandazi at home:
Ingredients:
• 2 cups all-purpose flour
• 2 tablespoons sugar
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/4 cup vegetable oil
• 1 cup warm water
• Oil for frying
Instructions:
In a large mixing bowl, combine the flour, sugar, baking powder, and salt or if you bought already mixed flour.
1. Stir in the vegetable oil and warm water until a soft dough forms.
2. Knead the dough for a few minutes until it is smooth and elastic.
3. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
4. Preheat a deep fryer or a large saucepan filled with oil over medium heat.
5. Divide the dough into 8 equal pieces and roll each piece into a ball.
6. Flatten each ball of dough and use a rolling pin to roll it out into a circle about 1/4 inch thick.
7. Carefully place the dough circles into the hot oil and fry for about 2-3 minutes on each side, until they are golden brown.
8. Remove the mandazi from the oil and drain on a paper towel.
Serve the mandazi warm, with tea/coffee, your choice of dipping sauce or toppings. Enjoy!
